Cider, an emblematic beverage of the french culture, is not limited to its sparkling form. Indeed, through expert craftmanship, it serves as the foundation for refined spirits such as “Calvados Domfrontais”, Le fine de Bretagne” and the “Lambig“. Cider Spirits: Origins and Crafting

The distillation of cider allows us to obtain spirits that concentrate fruits aromas. Then, aging in oak barrels imparts woody, fruity, and sometimes spicy notes. Ultimately, each region adds its own signature through the selected pear and apple varieties, and the distillation methods employed. 

Calvados Domfrontais: The Finesse of perry

The town of Domfront in Normandy gives its name to “Calvados Domfrontais“, a renowned region for its perry pear trees. With at least 60% of pears, this spirit is distinguished by its lightness and subtle aromas of ripe pears, white flowers, and orchard fruits 

This unique composition provides a particular finesse, contrasting with traditional Calvados, often woodier and more powerful. Moreover, its aging of at least 2 years in oak barrels enriches its aromas while preserving the elegance and freshness of the fruits.  

 Calvados classifications vary according to their aging duration:  

  • VS (Very Special): at least 2 years, offering a fresh and fruity profile. 
  • VSOP (Very Superior Old Pale): minimum 4 years, developing more roundness and a balance between fruit and wood. 
  • XO (Extra Old): at least 6 years, revealing spicy and woody notes with a beautiful length on the palate.

Fine de Bretagne and Lambig: Breton treasures

Since 2015, the “Appellation d’Origine Controllée” (AOC) has recognized “Fine de Bretagne” for its artisanal expertise, framing its production within strict guidelines. Producers carefully select Breton ciders to be distilled once or twice depending on their traditional methods.  

Following distillation, “Fine de Bretagne” rests in oak barrels for at least two years. This aging process allows it to develop a rich aromatic palette, combining fruity and woody notes with a round, harmonious texture. 

Before the AOC, Bretons referred to this spirit as “Lambig”, a term still widely used today. It denotes traditional or long aged versions, some resting in barrels for 10 years or more. These “Lambig” gain complexity and intense aromas. Overtime, spicy and deep notes emerge, accentuating their authentic character.  

In Britanny, “Fine de Bretagne” is often considered the equivalent of Normandy’s Calvados. However, its specific production methods and extended aging give it a distinct identity. Refined and expressive, it offers a truly unique tasting experience.

The distinction between these spirits

Composition: The “Calvados Domfrontais” contains at least 60% of perry pears, which provides its signature finesse and freshness. On the other hand, “Fine de Bretagne” and “Lambig” are crafted exclusively from apples, developing rounder and woodier aromas.  

Distillation: “Calvados Domfrontais” is distilled once in a column still, which allows to preserve the freshness of the fruit. However, “Fine de Bretagne” and “Lambig” can undergo either single or double distillation, which directly influences their aromatic intensity.  

Aging: “Calvados Domfrontais” is aged for a minimum of 3 years, while “Fine de Bretagne” rests at least 2 years. Finally, “Lambig” can be aged for 10 years or more, offering much greater complexity.   

Tasting and pairing

Tasting Calvados” or “Fine de Bretagne requires patience and attention. Served lightly chilled in appropriate glasses, ces eaux-de-vie de cidre dévoilent pleinement leurs arômes, aussi bien au nez qu’en bouche.

With its woody and spicy nuances, Calvados pair perfectly with apple-based desserts, dark chocolate or Norman cheeses like Camembert. In contrast, the fruitier and more vibrant “Fine de Bretagne” is an ideal companion for Breton crêpes, fresh fruit or regional cheeses. As it ages, it gains depth and pairs particularly well with caramelized desserts 

Thus, these spirits offer a refined and authentic tasting experience showcasing the full extent of artisanal expertise. They can also be creatively integrated into a variety of cocktails.
