AOP Cotentin designates traditional cider, crafted exclusively from apples grown in the Cotentin. This Cider is distinguished by its dry character, high tannin content and marked bitterness, which provide complexity and a good length in the mouth. It captivates its rich aromas, blending fruity, floral, and woody notes. 

Why seek this designation

The “Appellation d’Origine Protégée” (AOP/PDO) Cotentin, recognized in 2018, highlights artisanal expertise and the unique terroir of the Cotentin, in Normandy. It guarantees authentic cider, produced according to traditional methods and strict criteria. This recognition allows local producers to preserve and promote the richness of their orchards and the identity of their cider.  

The Criteria for AOP/PDO Cotentin

Only ciders produced within the Cotentin geographical zone, covering 328 municipalities, are eligible for the appellation. 

  • Cotentin AOP cider has an actual alcohol content of more than 3.5% ABV and a total alcohol content exceeding 5.5% ABV.
  • The designation “extra-brut” indicates an actual alcohol content of more than 5% ABV, with a total alcohol content always above 5.5% ABV.

AOP/PDO Cotentin cider is recognizable by its straw-yellow to orange-yellow hue and fine effervescence. On the palate, bitter flavors dominate, offering a beautiful balance. Slow fermentation develops the cider’s full aromatic richness and refines the delicacy of its bubbles 

Orchards must maintain a precise balance between apple varieties: 

  • At least 60% bitter and bittersweet apples, which form the cider’s foundation. 
  • Up to 40% sweet or acidic varieties as a complement. 
  • Up to 20% of other cider apple varities may be used. 

The sparkle in AOP/PDO Cotentin cider comes solely from natural fermentation in the bottle, with no added CO2. 

How to taste it?

Cotentin cider captivates instantly with its dazzling hueranging from straw yellow and golden orange. Its fine effervescence catches the eye and invites you to take a sip. From the first effluviate, it releases a subtle bouquet where delicate notes of butte and dried herbs intertwine.  

On the palate, it is a pleasant surprise: a discreet acidity balances the whole, while a refreshing bitterness expresses itself with elegance. When labeled “extra-dry”, the cider confirms its personality even further: the tannins intensify, and the bitter flavors take center stage.  

Structured and dry, the AOP/PDO Cotentin is ideally enjoyed chilled between 8 and 10°C to fully reveal its aromatic richness. For the optimal experience, it is best served in a tulip glass that will accentuate its complex aromas. If not, a white wine glass will do perfectly.  

How to pair it?

Thanks to its dry and tannic structure, AOP/PDO Cotentin cider is a wonderful accompaniment to many dishes: 

  • Seafood and fish: Its bitterness and vivacity make it an ideal companion for oysters, moules mariniere, or grilled fish. 
  • Charcuterie and White Meats: Its structured profile echoes the flavors of rillettes, white pudding, or roast pork. 
  • Norman cheeses: It pairs beautifully with full-flavored cheeses like Camembert. 
  • Apple desserts: Its fruity and woody notes sublimate a classic Norman tart or an apple crumble.
