AOP Cornouaille cider must ferment slowly and naturally, with spontaneous carbonation. No industrial carbon dioxide may be added, ensuring a fine and authentic effervescence.
To hold this prestigious designation, the cider must meet strict requirements regarding alcohol content:
- Actual Alcohol Content: Over 3.5% ABV, representing the alcohol produced after fermentation.
- Total Potential Alcohol: Exceeding 6% ABV, including both the actual alcohol and the residual fermentable sugar.
These requirements ensure a harmonious balance between controlled fermentation and unique aromatic richness.
Each batch must adhere to rigorous proportions:
- 70% Minimum of Phenolic Apples: Rich in tannins, these are essential to the cider’s structure.
- Up to 15% Acidic Varieties: To provide freshness and balance.
- 60% Maximum of a single variety: to preserve aromatic diversity.
- Up to 20% Unlisted Local Varieties: To maintain the richness of the terroir.
The sparkle comes exclusively from natural fermentation, with no added gas.
AOP Cornouaille cider is crafted solely from pressed apple juice. The addition of water, colorants, or concentrates is strictly prohibited, guaranteeing a product of exceptional purity.
