Phénix – Maison de Perguet

Explosive aromatic richness on the nose. We begin a journey into the heart of a cooperage: wood shavings, smoky notes, and new oak barrel. Then come dried fruits and caramelised pineapple, unfolding in a spirit-like atmosphere.

An unexpectedly taut cuvée with a frank, acidic attack. On the palate, yellow-fleshed fruits such as peach and nectarine reappear. The oak ageing gives structure to the cider, with soft tannins on the finish. A still cider that will benefit from a few more years in the cellar to reveal its full potential.
