A cuvée whose name immediately evokes the great Champagne houses. A clean, refined style full of subtlety for this disgorged cuvée, revealing warm and comforting notes.

The mouthfeel is silky, carried by extremely fine bubbles. The cider envelops the palate with harmony. It offers a long finish with pleasant vegetal bitterness and well-integrated tannins. Mineral notes re-emerge, carried by the bitterness.

Pairings: mussels with cider and bacon, seaweed tart and crispy buckwheat, maki.
