Basa Juan 2023 (pronounced “bachadiaoun”) is a sparkling cider that is generous and indulgent, revealing aromas of dried fruits along with subtle notes of apple and pear.

Its slightly bitter finish and long aftertaste make it a refreshing and thirst-quenching cider.

It is made from a blend of 15 local apple varieties, harvested at full ripeness. The process involves direct pressing, fermentation in stainless steel tanks, and natural effervescence developed in the bottle.

It pairs ideally with cured meats (such as chorizo or Bayonne ham) or dried fruits like hazelnuts and chestnuts.

Best enjoyed well chilled (around 7°C) and stored upright, away from light, with a cellaring potential of 6 to 8 years.

Pascale and Bixintxo APHAULE, both born into the world of wine, have a deep attachment to their land. They have chosen to work here with respect for people, nature and their Basque heritage.

Founded in 2001, Domaine Bordatto was built from the ground up. They have distinguished themselves from their Spanish Basque counterparts thanks to their cellared apple wines, which have the character of grands crus.

Driven by a deep love for the craft of winemaking and their region, they have embarked on an ambitious life project, cultivating 4.5 hectares of orchards and 2.5 hectares of vineyards.

From a dry apple wine with complex aromas to a fresh cider made from 12 local varieties, Domaine Bordatto showcases a fruit-growing heritage well-suited to organic farming. Each cuvée, named in Basque, fully expresses the Basque terroir.
